Pumpkin Snickerdoodles

3 1/4 C flour
3 1/2 tsp cornstarch
1 tsp cream of tartar
1/2 tsp. baking powder
1/2 tsp. bakin soda
1/2 + 1/8 tsp salt
3/4 tsp. cinnamon
1 tsp. pumpkin pie spice
1 C. sugar
3/4 C. brown sugar
1 C. butter
1 large egg yolk
3/4 C canned pumpkin
1 1/2 tsp vanilla
For rolling:
1/4 C. sugar
1 1/2 tsp. cinnamon
-Cream butter, sugar, and brown sugar, just until combined. Mix in egg yolk, then mix in pumpkin and vanilla.
-Slowly add dry ingredients, then mix until combined.
-Divide dough in half. Place each half in a bowl and cover with plastic wrap. Chill 45 mins--1 hour.
-Preheat oven to 350 degrees.
-Combine cinnamon and sugar. Shape dough into balls. Roll in cinnamon and sugar mixture.
-Bake 8-10 mins. (they should look slightly under baked)
-Allow to cool 5 mins then transfer to a cooling rack.
